The best mangoes are fallen on the ground. Or just about to fall, that when you barely tug on them, they come right off the tree. If mangoes are fallen then get them  "before the squirrels" molest them. I lived downhill from an apple orchard and the best apples were the ones on the ground excluding the rotten ones. Traditionally, these wind blown (off the tree) apples  and other B grade apples were what apple cider was made from.

I don't know if it matters with the following considerations:
Fruit on the tree doesn't get sunburnt but sun warmed fruit put up in a box will have a lot of field heat that can build up. Dropped fruit in direct sun will get scalded/sunburnt. Pick up 'drops' in the evening because so many vermin/varmints are nocturnal and will spoil the dropped fruit.

Might be other factors at work.

Some medicinal plants have different alkaloid levels depending on the time of day harvested. Evening tends to be better for harvesting for many plants.

Sugar and other flavor content probably is effected by time of day of harvest as well. Sounds like it's time for another quasi experiment.

In my experience....in the mornings.
The Earth laughs in flowers. And bear gifts through fruits.
No where to plant it ...but at least I got it. ;)

DPI in Queensland/NT has started recommended that commercial growers pick at night as the sap pressure is much less and there is less chance of sap burn for both the mangoes and the pickers. Probably not really a problem in the home orchard, but if you are picking for fruit quality it might be a consideration.

For me, I noticed that herbs  like basils, mint, corianders, etc.. are much more perky in the morning. I pick them in the morning.

As for Mangos, most definitely, best time is to beat the rats and squirrels. They tend to know when fruits are ready to eat.   I just thought if anyone ever  experiments with the time of day as to when to pick mangos that would give the best flavors?  Since I don't have many mangos to do the experiment, maybe you folks with huge mango tree can test it and compare notes?  I might be able to experiment with it in the next few years. Right now, not lots of mango to play with.  Plus, my family tend to like eating green mangos for salad.
