I said  "in my opinion"...and I don't care how many recipes say to use ice (I have actually tried it with ice and prefer it made without it), I will continue to make my shakes in the mortal word of Frank Sinatra...

What, you are going to freeze the pulp? Ice is an abosulte for a Mamey Batido.
I am not arguing that fact as Batido is more of a smoothie, not a milkshake.  If you want to be technical, the two are different.

Don't know what I am going to do with the pulp.  I have a bunch of mamey and they are all ripening fater than I can eat them.  Have made a load of shakes, have dehydrated some and made a flan out of it...and still have ripe fruit to go...

I added a banana in my latest mamey milkshake. And both my daughter and wife liked it better than with only mamey. I think it was really good too - and you still could taste the mamey. I think almost anything you mix in with a banana will taste great in a milkshake.

I agree with bsbullie, no ice, just dilutes the taste. Freeze your mango or mamey first, and this replaces the ice. Vanilla ice cream & milk with a little vanilla extract & cinnamon does the trick!

I make a Hachiya Persimmon shake with bananas and strawberries and it taste just like a Mamey Batido.

Here's my "mellow" lower-sugar, non-dairy Mamey shake:

Blend the following until creamy::

- 2 FAT slices of mamey sapote, skin removed
- 1 cup of almond milk
- 1 tbsp coconut oil
- 1 tbsp of xylitol OR palm sugar
- about 6 ice cubes

Condensed milk is a must and I also use ice with milk. However I'm sure it's also great with vanilla ice cream and condensed milk.
