Recipes / Re: Easy Coconut Milk Method
« on: August 30, 2014, 08:08:35 PM »
Glad it worked out! An ice pick might work better than a screw driver, though, I have never felt like I needed to drain the coconut before putting it in the oven. The coconut flesh expands so much that no liquid leaks out despite the flesh cracking. It is possible that some liquid may evaporate, so I understand if you want to drain it first in order to get every last drop!

Making fresh coconut milk doesn't have to be dangerous or tedious. The secret to getting the husk off the coconut meat is to bake the coconut in the oven for 10-15 minutes. The heat will cause the meat to expand which will crack the shell. When the meat shrinks it will come off the shell easily. No special coconut tools, no power tools!

From there you simply blend up the coconut water and meat with a cup or two of water. Then strain through a nut milk bag. Only takes 15 minutes worth of work once you take the coconut out of the oven.

Oh. Get in there with your hands! The seeds are in little "sacs" within the soursop flesh so all you need to do is give them a little squeeze a and they pop right out. You can remove all the seeds from a large soursop in about 5 minutes once you accept that you will get a little messy.

OK, I actually tried this recipe finally and to say it is horrible is the understatement of a lifetime.  If you want an easier way to achieve the same results then throw away an egg and an avocado and then force yourself to throw up.

hahaha! I didn't think it was that awful, but it definitely was not pleasant.

I don't see why not. Just make sure your blender or food processor is powerful enough to combine all the ingredients. Sounds like an interesting idea for a green salad dressing. Will have to try that next time!

Certainly. The vinegar adds a little bite to the salsa but isn't required. The great thing about making your on salsa is you get to experiment!

What was difficult about it? Soursop can be a little overwhelming but the banaana really helps to smooth out the flavor and consistency of the smoothie.

I have done this before and cooked avocado tastes a little weird. Definitely tastier to fry an egg and place it on a fresh avocado!

Still a cool way to cook an egg in any case!

This mango salsa recipe is super easy. Combine 3 mangos, 2 bell peppers, 1 tomato, 1 clove of garlic, 2 tsp rice wine vinegar, 1 tbsp olive oil, and a pinch of cumin, salt and pepper.

Thanks guys! I trimmed the bottom and put it in a shallow container with paper towels wrapped around the stem to help keep it moist. Here's hoping that it'll give me a tasty pineapple in a year!

What are some ways to encourage a pineapple top to take root? I have it suspending over a mason jar full of water and it is sitting near a window. About how long before I see signs of rooting?

1/4 cup rice wine vinegar, 1/8 cup olive oil, 1/4 cup fresh orange juice and 1 cup of diced mango.

Peel your mangos and cut all of the pulp away from the seed. My mangos were extremely ripe so I was able to just scrape the pulp off. Add your mango pulp, orange juice, rice wine vinegar, and olive oil together and blend until smooth. Then add a pinch of salt and pepper to taste. You may add sugar if you find that the mango and orange were not sweet enough.

Bananas!

The sapodilla as a very malty sweetness. Bananas are fairly neutral flavored and help mask a little bit of that cloying sweetness.

It very well could have been! The peel/albedo was fairly thin though and it seems like the pomello has a thick skin? The taste profile seems similar though based on what I have read.

Recipes / Pineapple & Grapefruit Juice
« on: April 13, 2014, 05:24:51 PM »
Well, this isn't much of a recipe as I'm sure we all know how to make fruit juice. Thought I'd share the juice I made today in any case! I got a nice medium sized pineapple from the market today as well as a giant grapefruit. The pineapple was pretty standard, just a little bit on the small side. The grapefruit (or some other type of citrus) was enormous. I have never seen a citrus that large before. It was roughly the size of a large cantaloupe. It was also much sweeter than any other grapefruit I've ever had. At this point I have no idea what it was and am only calling it a grapefruit because it was so big. Had a lot of fun making this juice, so glad my girlfriend gave me her nut milk bag before she left for the states. I'm gonna try to root the pineapple top so that I can plant it outside. I have one year left down here in Grenada so that should hopefully be enough time for it to give me a pineapple.

Thanks! This past year has really changed my whole perspective on fruit and food in general. Living in Grenada with fresh fruit everywhere and having a girlfriend with Indian roots will do that I guess.

And thanks about the blog. Having to update it every so often forces me to get out out of my house and explore. Only one more year left here in Grenada so I have to make the most of it.

Hello everyone!

I am a peace corps volunteer serving in the small Caribbean island of Grenada. I have fallen in love with tropical fruit during my time here. It has been so much fun learning about and tasting all sorts of fruits that I never knew existed. I look forward to learning from this forum and sharing my experiences with fruit in Grenada!

Recipes / Simple Spiced Green Mangos
« on: March 22, 2014, 07:47:02 PM »

I love ripe mangos and usually eat them as a morning or afternoon snack when they are in season. Mangos recently just came back into season here in Grenada so I was able to pick up a bag of small green mangos. I was planning on leaving them to ripen but my girlfriend told me that green mangos taste great with a little salt and hot pepper. I cut the green mangos into wedges, and sprinkled both salt and cayenne pepper on the pulp. The salt helps to bring out the tart flavor while the cayenne adds a nice kick. Sour, spicy and a little sweet!
