Beautiful layout and phots...as always.  I too would like to know what culitvar of canistel that is.  Also, my recollection is that the green sapotes that I have seen did not get such a nice orange exterior.  Is my recollection bad or is this orange exterior the norm?  The abiu pictured seems to have a caramel colored interior.  The ones I have seen have all been white fleshed.  Was this partially oxidized or is this variety a caramel color inside always?

That canistel is one i call Pointed Phillippine because it is one grown here mostly by Filipino people. I'm sure they are all seedlings, but they seem to retain that pointed shape and tend to be very large nice fruits. Yes the green sapote gets fully orange exterior when fully ripe. The abiu oxidizes very fast, so was difficult to set up that photo and retain true fruit color.

My #1 favorite woud be the white sapote. After that in this order: starapple, abiu, mamey, green sapote, sapodilla, and eggfruit, but i like and eat em all.

I have tasted a white sapote, about 3 years ago! but, it was really over ripe :(

I was wondering... have you tried to put lemon or lime juice on the abiu to stop the oxidation??? it work well with avos, maybe it will work with abius!

No never tried that. But abiu is totally different animal than avocado...abiu starts oxidizing after only one minute.

Abius do oxidize quickly...that is why I was hoping your's might have had a more natural caramel color....which would not show the oxidation that is usually so unavoidable.  Oh well....just have to cut and eat fast.

Yeah, your right! they are totally different! But, It might just work!

Black sapote fruits at different time of year. These are real fruits, not wax models. Very hard to get them all together at same time to photo. White sapote grown in right way can be an exquisite fruit.

Yeah, white sapote can go from absolutely delicious to bitter and awful tasting.  The missing black sapote from Oscar's picture will have to be excused as it is incredibly difficult to get all these fruits at the same time to be photographed all in relatively decent shape and therefor reasonably photogenic.  That's why Oscar's shot is so special.....no black sapote not withstanding.

Thanks Harry. Actually after taking that shot i learned that one of my neighbors has a black sapote tree that fruit almost year round. Mine only fruits in the spring. So including all the sapotes may have been possible after all! Maybe i can save work and Photoshop the black sapote in?  ::)
