I have 3 smaller peanut butter trees and they also have lighter green or yellowish leaves with new flushes.
They eventually darken so far. If your tree's leaves don't darken up then try a little miracle grow foliar and/or root drench.
I love miracle grow. I buy 25 lbs for ~30$ at Diamond R in LaBelle. When I use it overall my tree's leaves are noticeably darker green.
Did you plant the tree recently?

last summer.

Looks like mine, new leave are light color for a while before they turn dark.
I do not give it anything particular.
Started to fruit at a young age at two feet and couple of times per year.
Birds and squirrels love the fruit.  To beat them to it, I started to pick when they are orange colored but before they are dark red and soft, and let them ripen/darken/soften in the kitchen.
