Question on coyolitos

Any question for any central Americans on here.  My wife was talking about coyolitos.  It grows on a palm in Nicaragua and think it is Acrocomia, but, I couldn't get the exact variety to read up on it.

I see the candied version it looks like the palm fruit is used as a color/flavor, but she doesn't mention the palm variety.
