As I was cleaning a Mai 3 jackfruit today, I found out a quick way to remove latex from knives and hands: Dawn dishwashing liquid.
I'm sure a lot of you already know this but I thought I would share that it in case it helps people who are new 2 cleaning jackfruit.

Paper towel dipped in vegetable oil... wipe the knife with this before and frequently during cutting.

To clean latex I follow the same system advocted by fyliu. An import point I follow is to store the fruit for 1-2 days after I pick up from the tree. When latex is really bad on the knife I use a paper toel soaked in paint thinner. Be carefull to wash afterwards.

I've got a big jar of the Kirkland coconut oil from costco that works great.

Another tip: plastic bags. Just take a plastic shopping bag and repeatedly pad/rub your hands with it. The latex sticks to the bag and peels right off your skin/knife/table.

I tried a plastic bag for my hands and knife cleanup today and it worked well on my hands and ok on the knife. It was much better than a paper towel on my hands. I ran the knife under hot water and the plastic bag did a better job.

Good tip. I can't stand the scent of coconut in anything non dessert. My Mar of it is basically useless.
It's the oil that dissolves the latex. The paper towel only soaks up the oil. I think you need to choose between the plastic bag and the oil. The oil probably interferes with the plastic bag.
