here are a few bits of advice:
-let plants stay root bound for as long as possible
-repot plants into the same pot if possible (many times you can put the plant back into the same pot, just prune the roots, and add some fresh soil...bonsai growers do this all the time)...only put into a new pot if there is no other choice.
-do not increase pot size too much at once...gradually increase, only adding about 2-5 inches of diameter to the root ball at one time.
-you are basically a bonsai grower, but you want to encourage the plants to fruit as well, not just stay small..so you will have to give them lots of water (if they are root bound especially...but some plants do not need as much water as others....for instance Muntingia calabura can handle being root bound, without too much water needed to keep it happy, and fruiting....jaboticaba is not the same).
-so you will need dishes for the bottom of the pots (for certain trees...Myrciarias especially, and root bound plants that have high water needs)
-also you will need to prune the trees eventually, to keep them small enough to stay in a pot, and fit in the dome (green house)
i know you already know most of this, but I don't want you to be afraid to prune the trees!....or to prune the roots!! so many people are afraid to do this!
and I also didn't want you to step up (repot) the plants too quickly! this is another common mistake...people don't realize that it helps the tree to fruit faster (in some cases, especially with Eugenias, and Myrciarias) if the tree has restricted root growth.
I suppose the plant decides to produce flowers sooner, because it has no choice...it can't really grow more roots...so it tries to survive somehow, and keep growing. The plant runs out of options, and is forced to bloom,
