interesting this trend with the name kefir. "normal" kefir comes from dairy... and so, why call water kefir, "kefir"...? 
And it's not that random the bacteria i get, because if it would, sometimes I would have a bad batch doing this "random" thing with the coconut water, but it has NEVER happened, I have done this so many times... The coconut carries it's own bacteria, and so their is always success in a great tasting batch, for me at least...
There are health places in Thailand and elsewhere where you can buy expensive coconut "kefir", but you can do the same yourself for a fraction of the price, and I would say, mine tastes (in my opinion) even better, as I can control the exact level of fizz, and fermentation and good timing for consumption.

Unripe fruit IS toxic. It gives stomach aches. This is well known fact.
In Thailand it's popular to eat totally unripe mangos. They also have green papaya salad made from unripe fruit. The few times I've had those foods, my stomach has complained.
Just because "people do it", or it's common, does not necessarily mean it's good for you. In the west we eat junk food, and other very unhealthy stuff, some of it seen as good for us. "People do it", but that does not mean it's good for us. There has been many mistakes in the history of humankind... But sure, I believe in total freedom, people should eat what they like. But it's -in personal my opinion- a waste to eat a fruit that is immature : not sweet, much less flavour, harder, more fibrous... In that case, would be better to eat greens or veg... I don't judge... but it's a shame that on markets there are at times not enough ripe fruits to choose from

no, it's definitively a total other type... I've had it in India too, I think they called sweet lime, it's the size of and orange, and tastes sort of like an orange, (not like a lime). It's a shame it's not more common, it's definitely an amazing fruit.

Very Interesting... I really thought it was because of big differences of textures in different varieties... That might explain why I get stomach aches from the hard jackfruits, EVEN when I eat just a very small quantity. My stomach is sensitive to unripe fruit, and any kind of fruit that is unripe will cause me pain.

OK, you call it kefir, do you mean that you add kefir grains in it?
I just happened to have some coconut water in my bottle while travelling, forgot about it, and then made this "discovery" :)

ok, here comes an idea for you, not sure if it's of your liking... I FERMENT IT (and use it before it becomes alcohol) , and it becomes this amazing fizz with tiny bubbles! I put it in an airtight bottle, let it stand for a day and a half (could be longer if cold, or shorter if very hot). Honestly, it's really refreshing... I miss it just thinking of it...

well, I did't do it myself,  a woman in Sri Lanka made it for me, it's the best smoothie i've ever had! :) I think also that the quality of her fruits were very good... But i would say 55% mango and 45% soursop (if it's a sweet soursop, otherwise maybe a bit more mango)

It's great for me that they sell their fruits for reduced price just because it might not look perfect on the outside. I usually know when a papaya is super ripe, and that means also sometimes an imperfect skin with some smaller damages... I don't care a bit, I go for ripe, and even sometimes, slightly overripe fruits. Underripe fruits looks good on the outside, but is totally boring taste wise, can even be slightly toxic.

I hang around quite a lot in fruit markets whenever I travel, and the interesting thing i've noticed is that pomelo is very popular among especially japanese and chinese tourists, much more that europeans or others... I wonder why...?
Also, for the chinese new year they are really into nectarines. (Maybe citrus come from China, and they have long tradition associated with it?)

Have no idea what they are called, they are the size of an orange, but sort of green skin and very light coloured fruit inside. In East africa I had has some of these, really good... Actually, some of the best fruits I've had, was when I was travelling in Africa, still primitive out there, so less chemicals etc..., maybe that's one reason?

I know nothing about technical terms... I travel and have tried fruits in different places. I don't like jackfruits from  Thailand, too hard and crunchy, they give me a stomach ache. The best I've had were from Kenya and Tanzania, some from Sri Lanka, I like them  very soft.
Any soft and squishy ones out there?

Btw, I really prefer tiny durians, a huge montong (?) is just too much to carry around, and then you might eat too much of it, or you need to store it... On an island in Thailand there are those local mini durians that are not the sweetest, and they do have quite a big seed (so less fruit), but the taste and flavour is creamy and amazing, almost strawberry like. I'd rather have on of those any time than those sugary huge things with lots of fruit meat, grown commercially. The mini durians comes from peoples small private garden, are very fresh and are such a treat

@fruitlovers: you mentioned lychees
When I was in Northern Laos in May this year, I had some incredible lychees, much nicer than the ones I had in Thailand or elsewhere. It was really hot in the daytime and these juicy lychees were great, very refreshing. In a way, I think the best fruit, for me anyway, is the one that is super fresh and super local.

when i was there I remember: amazing passion fruit in tanzania, nice soursop, and these oranges with green skin and light color inside, the best oranges I've eve had. and in zanzibar, amazing bananas, many strange and different types and flavours, including plantain, when slightly overripe can be eaten raw and is delicious. Something I remember from my trip in africa: compared to asia, it was harder to find fruit, maybe less variety, but the taste... somehow better than in thailand, because it tasted more organic and natural... thailand has great fruits, but is also a bit  more developed, and more commercial, in general (but not everywhere of course).
East africa has great fruits, go there:)

when i started eating (totally loving it) it became a bit of an obsession... finding the best, ripe, sweetest ones... sure I STILL love durian, but... I am now in love in another fruit (well, when I am travelling in tropics, am now in the very north of europe), and that fruit is... chempedak... I would say that it has become my favourite, but also much less available because less hyped in thailand for instance... there is such hype about durian... something that puts me off a bit... I'm going for less famous fruits :) another fruit I liked in the beginning but got quickly fed up of was marang, addictive because of it's extreme sweetness, but for me, a bit uninteresting taste wise...
