I have heard that freezing American/Hachiya persimmons for some time will remove most of the astringency from them, is there any truth to this claim?

I don't think that's true. But I'm only 90% sure.

Never tried that freezing method, if you try it, please let us know how it turns out. We usually plan on picking after they start turning orange.. when picked somewhat light orange and ripened in the garage shelf where it's cooler, my wife pulps, measures, and freezes the Hachiya persimmons in ziplock bags. They seem fine.. Nice to have persimmon cookies at Christmas and January onwards.

I tried it. It does remove astringency either completely or partially. However, the fruit doesn't taste nearly as good as when it ripens naturally.

Chinese people have a way to place these in a basket with a container of ethelene below to ripen.
I do not have time to write , but pretty simple
just place some rocks or something , and a plate in a bucket and place alcohol in bottom , and rest simmons on top.
rest on counter with a banana in a PAPPER bag but I haven't tried it with simmons have with other stuff.
(and do not store apples with onions wil ruin them
or try to place in a plastic bag gasses will build up, and make the food sweet with the humidity.

Not sure if the top of the lid is slotted to allow gasses to escape I forgot of sealed
but I would look into it if I Did it
I believe if you keep it sealed air it out every 12 hours each day I suppose,
but I do a lot of times keep fruit in paper bags to ripen others just haven't tried the persimmoj technique
