Persimmon/Sharon fruit - can it be trained small?

Hi there, first post here and the reason why I signed up!
I am looking for some information on training a persimmon tree.

I want to grow one at our allotment but we are obviously restricted on heights with dwarf only.

So two questions:
1 - can they be trained to stay smaller? I've heard you can grow them on an espalier, but I'd probably rather a normal tree shape based on where its location would be.

2 - If so, what is the best variety to try and do it with? Veering towards Fuyu? There doesn't seem to be an official dwarf rootstock version of it around anywhere so would have to be pruned quite hard annually I presume?

Any assistance would be greatly appreciated!

They are small trees.
Fuyu is usually Jiro and there are otther varietyes  ,a lot better wich you can grow ,like the pollination variant varietyes.
