my friend accidentally ate an un ripe, not all the way opened akee, and felt nauseous and threw up eekk! Ive learned that they arent really fully ripe until their texture is squishy...
In cases of fruit that can potentially cause death, I would encourage having someone experienced in ackee cleaning show you how to do it the first time. I was fortunate to have a Jamaican gentleman who demonstrated the procedure in exchange for half the crop. I would have given him the whole thing!
I'm not sure what you mean by "fully ripe". Once the shell of the fruit opens, even a small crack as shown in the second picture, sunlight will reduce the hypoglycin to safe levels. As Oscar mentioned, the seeds (and the smaller aborted seeds) are always poisonous. As the arils are somewhat folded, it is important to smooth out the arils from the interior side to insure that all pinkish strands are removed. I like to rinse them under running water, air dry them for half an hour or so, and then freeze them for later use.
I detect a pleasant, nutty flavor to the cooked arils. While the uncooked arils are safe to eat, the flavor is rather bland.
