How papayas get red color inside, from ripening on the tree, not in the tree, in a specific way or depending on the variety? how

The papaya when picked green and unripe is generally white inside. As it ripens the sugar content increases and changes color. It's a vegetable when prepared green. Makes an excellent pickle.

The true red is specific to some papaya varieties.
