Does passionfruit continue to ripen off the vine?
« on: November 01, 2019, 02:52:18 PM »
Sometimes fruit drops from our vine pretty green - will it sweeten up at all on the counter or not? Thanks!

I find they get sweeter at the wrinkled stage. Do some tests to see. One thing I recently found was the fact that passionfruit produces more ethylene gas than any other fruit while ripening. This could be useful speeding up ripening of other fruits.

Wrinkled ones get rejected here. The flavour does change but Im not sure that acidity reduces. Good varieties should be pretty sweet soon as the colour changes.

Yes. As long as they are ripe when picked or when they drop, they will continue to ripen and sweeten up some, and lose acidity and sourness.  Wrinkled ones are fine with me, they are just near the end of their goodness.

An unripe passion fruit picked early or that drops early will not ripen properly.
