It seems we have way too much rain here for growing Carambolas. I know they can be grown in large planters, but what does it do to the tree? Smaller tree? Fruit quality? Etc.

Yes you can grow them in pots, make sure the container is big enough like 50-100 liters.
You will also need to prune the roots every 3 years and change some soil. Also keep in mind they are heavy feeders, fast growers and thirsty, sometimes comparable with bananas in pots.
Here is mine in a 50L pot, and it needs shelter at -18 C during the winter.

But I am convinced I have finally pinned down the flavor of carambola. It is a fruit version of Brussel sprouts.

That's so weird but it's a really accurate description of some of the carambola I've tasted! Lol
