Mango Vinaigrette Salad Dressing

1/4 cup rice wine vinegar, 1/8 cup olive oil, 1/4 cup fresh orange juice and 1 cup of diced mango.

Peel your mangos and cut all of the pulp away from the seed. My mangos were extremely ripe so I was able to just scrape the pulp off. Add your mango pulp, orange juice, rice wine vinegar, and olive oil together and blend until smooth. Then add a pinch of salt and pepper to taste. You may add sugar if you find that the mango and orange were not sweet enough.

I don't see why not. Just make sure your blender or food processor is powerful enough to combine all the ingredients. Sounds like an interesting idea for a green salad dressing. Will have to try that next time!
