Sweet potatoes are easy to grow in South Florida ,but doing so with out bugs eating holes in them...seems difficult...

Sounds like you may have the sweet potato weevil. You may have to eradicate all plants on the property including morning glory, wait a few years, and try again. If you leave the plants in the ground growing feral the weevils will eventually find them and be with you forever. Eliminating a source of refuge for a year or two and starting clean may help get rid of them.
Be careful where you get potato vines it is very easy to spread the pest by sharing vine cuttings or infested potatoes.
