Instead of pulling up all my yacon plants, planting the rhizomes and harvesting all the tubers, I'm now just harvesting tubers on demand and leaving the plants to grow more. Seems much more time efficient that way.
I harvested this big guy that was coming up from the ground, today.

I see these are used as a sweetener that doesn’t raise insulin. How do you use them?

I peel them and eat them raw. They're similar to yacon. You can make a low sugar syrup, too

Extract the juice and reduce over low heat. Haven't made it yet, definitely curious. Looking to start this crop, any leads appreciated. I'm looking for Smallanthus sonchifolius?
