One idea for you Adam (doesn't apply to your current tree of course): I've read that if you do a special proceedure you can get fruit quite fast on Mamey Sapote.Sprout the seed, cut the taproot to just where it is comming out of the seed, onto that graft scionwood from a mature mamey of a type you like. Supposedly the seed will develop a new root and your plant will flower/fruit soon (possibly in as little as 2 years).Currently I have no live Mameys (I had some, sadly lost them) but I've had them before in 5 gallon pots. Typically they get horribly root bound and tended not to rocket up much past 6'. Yours looks a lot happier than mine even when they were in their "prime" (such as it was).
