Crystal Guava When to pick?

The Crystal Seedless scions I got from xshen are starting to fruit. Most of the pictures I can find show somewhat small fruit. I feel like this needs to get a little larger. When is the optimal time to pick? Thanks.

For crunchy texture, pick when it just transitions from darker green to a lighter green.  It will be lightly sweet, but refreshing. 
If you let it go longer (even lighter green with red streaks), it will be even sweeter, but lose a lot of it’s crunchiness.
Right now, I would consider your fruit in the picture as ready to pick for good crunchy texture with light sweetness.
You must be experiencing a later crop, as most of my crystals were gone well over a month ago.

Excellent. Thank you for your help. I think guava can fruit most of the year here in Florida. Pruning stimulates flowering as well. There are a couple small fruits and the rest of the tree is covered with flowers right now.

Is this a truly seedless guava? I am very interested to know how it tastes.

You might have enough fruits to try them on different stages of ripeness and decide which one you like. I did that with my guava.

You’ll probably get 6-12 seeds in each fruit.   That constitutes seedless in my book.
The seeds are small and don’t bother me.
