Prune and maintain fruit tree as home grower

Hi guys,

I have couple young fruit trees and trying to maintain their height as home grower,  not commercial/ farmer.   Also space is limited too.  I don't want fruits drop on the ground, just want enough for family and friends. 

Here are my longan and cherimoya trees.   Im thinking to prune them at 8-12" branches.


Here is longan  tree.  I cut down from 6 feet and new growths this year.  Is it good idea to leave little longer and prune back to 12-18inches?







Cherimoya is about 6" right at neighbor wall.

Since i focus on root and vigorous, dont expect any fruit this year.  Here is what i did this weekend.  Hope will get some great growth.

Question regard to longan tree .  I top this from 6 to 2feet.  Now There are 3 growths like this.  Is any getting weaker later or need to trim.

i only do one style of pruning on my atemoya and guava, open vase. The V start below knee high. I only keep 2 branches that form the V in the direction I like. The rest I clip off.

As for the longan, I would remove all those suckers.

How many ideal branches do you want to keep from main trunk?  Currently i have 1 branch for 2 sides front and left and other 2 sides each side has 3 branches like above.  Should i keep 1 branch for each side?
