My mom used to make grapefruit rind in syrup.  Was delicious.  Now she says grapefruit varieties have too thin a rind to prepare that way.

My wife and I do occasionally save the Mandarin's peel, after
slicing it thin, mixed it with our homemade paste "condiment".
Been eating them this way in our family for generations...

Now that I think about this, I imagine that we can also sprinkle
some slices to our salad...,planning to try this too...!

Mandarin and orange peel are sometimes used in Chinese cuisine, typically tossed in a stir fry.
The peel is what contains most of the oils and aroma, so for adding flavor the peel can be more useful than the fruit itself.

Many cake and muffin recipes call for adding lemon zest.

How about eating kumquats? I bet you'd get lots of benefits from eating all that peel!
