On our way to Johnny Nicolas' Hilltop Cafe (former member of Asleep at the Wheel) we took our back road along Gypsum Mine Trail Road.  Courtesy of Georgia Pacific Gypsum mines I picked up a bucket of fines along the road.   Put a handful on my mangos.   Hope you guys are onto something.



Just pulled this ST green as opposed to the first one that was full yellow. 



Am totally new to this.  Apparently the first one I pulled was over ripe.  Had a great taste though and a fine texture.



Fun to play with this stuff!

ST can have problems with uneven ripening within the fruit. Your second pic mostly greenie should turn out great given a few days on the kitchen counter

Asleep at the Wheel=== Did they do "I'll fix your flat tire Merle"   I think it was Big Brother

Haven't noticed any uneven ripening issues when picked at minimumor better ripe stage...

Why do you say the one in the second picture is overripe?

Based on comments received like, "eat it now, looks over ripe".  Like I said, texture and taste was excellent.

His cafe' which is cluttered with old memorabilia, deer head on the wall with Xmas lights....you get the picture, has exceptional food and bands.  He is shy in person but get him behind his piano, harp, and guitar and he turns into a a wild man.  Speaking of wild man, we attended a dinner concert with Ray Wylie Hubbard, an act not to be missed!  Local boy too.

Bought some gypsum today off of amazon, since I'm prime member it was free shipping and slightly cheaper than Home Depot which I went to first and they were out of stock on it. : /

I’m in love with my sweet tarts.  I have an Alphonso that 3 different East Indians told me is the only Alphonso they’ve had they tastes like home.  It has a spiciness and tartness that intensifies closest to the skin.  I have a nam doc which I despise.  A one note sickly sweet mango that is prone to jelly rot.  I’m looking for mangoes that have a similar acidity profile.  Any recommendations?

Mangos with acidity for Mjango: Cecilove?  Zinc?  Carla, Harvest Moon, Pineapple Pleasure?  Sugarloaf, Pina Colada?  (I haven't had the good fortune to taste any of these except Pina Colada once, but an acid component comes up in their flavor profiles.)  Har?  Alex?  Jeff?  Anyone with experience, knowledge, and lots of trees?

I would still think there might be others like Sweet Tart with that intense sweet and tart simultaneously, not just an under-ripe tartness.  No?

I had one called Lucille that I have notes saying it reminded me of sweet tart
