Total soluble solids (brix) of 15 is pretty low. That would seem to indicate that it's not very sweet and thus good for canning. I've never tried one though.I would expect a TSS north of 20 on a good longan.

I found the excerpt in an article on longan cultivars when i was looking for fortune eye before. Thought it might be a help as a guide. As cookie monster said it msy vary between location.
