Earlier tonight I saw that the stem was pulling away from the flesh of the Fino are Jete which is a sign that the fruit is ripe. I cut open the fruit and it was a creamy white color. The flesh of Fino is slightly firmer than Sabor and El Bumpo. I tested the Brix and was a bit surprised to see that it was only 19% Brix which is not necessarily a bad thing because Cherimoyas can be overly sweet. The flesh in the center of the fruit was firm, which I like but the flesh near the skin had the texture and graininess of pear which I don't enjoy as much. Also I mentioned that the Brix was 19% but the sweetness was not even throughout the fruit. Some parts tasted mildly sweet and I got a couple bites that were very sweet. I tested out two sections of the fruit and both came out at 19%. The thing I really like about Fino De Jete is the smell of the flesh and this very mild fresh heavenly flavor that I can't quite put my finger on. A really good well balanced fruit.
I give Fino De Jete a 7 out of 10. I just want to re iterate that these are excellent fruit but I don't give out high scores easily. I'm one who believes perfection cannot be achieved so I don't or will only very rarely give out a score of 10 out of 10. For me, a score of 9 out of 10 is oh my god, I can't believe how delicious this fruit is, near perfection! An 8 out of 10 is an Excellent piece of fruit. A 7 out of 10 is a great piece of fruit but I may have wanted more Sweetness, Acid, stronger flavor or better sugar acid balance. Most of the really good fresh Cherimoyas I find at the Farmers Markets are great eating quality and I would give them a 6 out of 10.
