one of my favorite things to make out of jaboticaba is fruit leather.

here are some pics of some leather that I made last night....

we used pure Red Jaboticaba pulp, and a bit of lemon juice (1/2 a lemon).

After messing up a few batches, I finally got the method down to a science.

I plan on making these to sell in the near future...(we calculated the price...it would cost about $6 for a quarter of a whole roll)

the taste is excellent...super sweet, yet tart, and taste almost exactly like eating the jam.

Nice job, Adam. That's the way to go about it. Build a nursery, sell plants, collect plants, and make products to sell from those plants. When you're the next big thing at Whole Foods, don't forget about your friends here. Lol

Funny u should say that...I've already done this for a few customers!

I'm predictable!

(it's one of the best things I can do with the fruit leather now, other than eat it all to myself  :P  I can't legally sell this batch, because of the cottage laws...but I can give it away!!)

wow that stuff looks tasty too!  I will probably change the name of the thread to just "Tropical Fruit leathers"...i don't want to exclude all the other great fruits we can turn into leather...I love the stuff for many reasons..the taste, the texture....the simplicity...and ease of production.

Adam,

It taste really good because it's made from Apricot. You can use it in many recipes, you can make juices, jellies, puddings, etc.  You probably can do the same think to Jaboticaba leather.

no we did not puree...I mashed it through a colander with a potato masher...so it's a bit more rustic (less work)...there are even tiny bits of seeds here and there...and they don't taste half bad when they're small/ aborted seeds...it's the large seeds that taste bitter..I made sure to remove all of them, for planting of course (and selling)

look closely and you'll see all sorts of bits and pieces of the anatomy of a jaboticaba fruit in the leather...most notably are the small/aborted seeds and the floral remnants...which looks like tiny dark rings.

yes...thanks for reminding me...I guess this isn't fruit leather, it's a non toxic, tacking putty.  :P

you can use it to stick pictures or birthday cards to your fridge!

Pink guava fruit leather is absolutely fantastic gold standard in fruit leather IMO
I wonder how Jabo leather compares cauz its sounds amazing!

Fruits with some acidity make the best tasting leathers i think, I much prefer apricot leather to the actual fruit!
Feijoa might be another good leather!

Hawthorn leather doesn't taste amazing but apparently some research suggests it benefit as a cardio tonic:)
I think its pectin content that helps a fruit leatherize to a nice texture so some fruits may need added pectin? hawthorn has alot so could add it  tto difficult to
 leather fruits maybe.

Stuart: Thanks for the confirmation. It sounded good in my head because they make spanish membrillo with guava in the Philippines, since quince doesn't grow there. Agreed, it needs to be pink, for the correct flavor and chew. Maybe some South African fruits would work well, Marula or strychnos? Maybe a dovyalis?

Adam: I think Jackfruit and most likely Mango would work too.

Guava texture somehow is so so nice in leather form!
Any fruit should make leather cauz if it doesnt have high pectin you can just get pectin powder or mix with a high pectin fruit:)
Marula would be good if i new how to get the damn flesh off the seed without using my mouth :P Maybe if i just dehydrate the juice i make from them? and mix with abit of Hawthorn:)
Mulberry also in the mix turns any leather a striking purple and tastes good too!

In India Mango is commonly made into Leather. It is available in many super markets.

Mango and jackfruit are the most routine for drying and leathers here.Bananas,pineapple,soursop and papaya are routinely used.
