I think your plan to cut the one remaining original branch is a good one.  Cut it above the fork where the lowest shoots come off it.

In essence then you'd have a tree with three main branches, and the one main branch with several shoots coming off it.

If you're fortunate, the stronger roots now should cause your two new main branches to catch up.

Be sure the tree receives enough sun.

Yes, that is what I am recommending.  Just above the baseline of the house.

It wouldn't hurt to wait a bit, either, so there is more above ground leaf volume to feed the roots for a while.

A few weekends ago, after attending Mango Mania, I drove over to Treehouse Nursery to purchase a Lemon Zest. The only one they had left is in the photos (7 Gal).
I wasn't too thrilled with the shape but figured I could cut it back to get it to fill out.

One of the branches was pretty much straight up so I cut it back to 3" above the fork (sorry....I didn't take a before shot). As you can see, it already has new growth
on the branch that was cut. I would like to cut back the other branch and was wondering: Should I cut the 2nd branch 3" above the fork or go a little higher? Any other
recommendations welcomes.

I am not sure about the PPK,  LZ and OS being identified by taste, especially if you haven't had all 3 before.  The shape and size dont look consistent,  and curious as to the origin of the OS.  Not sure why ghe PPK are green and OS are golden/orange and the size being the same in your picture.   One of your Valencia Pride looks round?  Not saying you are wrong, just trying to help properly identify the varieties if they are indeed incorrectly marked.

You also said you visited Tree House and Truly Tropical.  Were you on both the west coast and east coast of Florida?   Were the rambutan advertised as being grown in Florida?
Wrote Truly Tropical but meant Fruitscapes.The Rambutan's orgin weren't listed. I did try one when I got home and it was excellent. I also tried one of the Orange Sherbert tonight and it did have a distinctive orange taste. Perhaps not conclusive since I haven't had one before but now wish I had purchased more than 2 of them.

Some of those mangoes look off on id/names.

Could well be Rob. I haven't tried any of these before and had to go by how they were labeled.
At least the Lemon Zest, Orange Sherbert and Lemon Meringue should be easier to determine,
by their taste.

I attended the Mango Mania today and was Puglvr ever right about it being hot and humid. I must say that I was less than impressed.
The mango variety was not what I was expecting and I later spoke with a local who said this year was disappointing.

Fortunately, I decided to make a run over to Tree House and Truly Tropical as well as another place near them where some folks had quite
a few varieties in buckets on their front porch. I purchased a 7 Gal LZ at Tree House (the only one they had) and learned that their nursery
is up for sale.

I'll be there. I believe I'll go early and stop by Treehouse and Fruitscapes nurseries and perhaps buy a tree or two. I've bought many trees from them and have been very happy with my purchases.  See ya there!  8)

I emailed Treehouse last night, asking if they will be selling plants at Mango Mania. Hope
to have an answer when I get home later today. If not, both Treehouse and Fruitscapes are pretty close
to one another and not too far from the German Club. Based on the current weather on the West Coast,
next weekend will be very hot and humid.

Update - Lianne at Treehouse said they will not be selling plants a the Mango Mania.

yes I put some of my super compost fertilizer on the mangosteen and durian so it should give them a jolt.

Thank you for the luck bsbullie, I know its a stretch but I have researched all the conditions to grow a durian and we have them all here except for the cold, but was watching a documentary released this year on the arctic melt and all the scientist said based on the way and speed the arctic is melting it would for a fact be all gone by next year in july. So if that at least raises our minimum winter temperature (if there is still gonna be a winter) by at least 12 degrees than I think I just might have a chance. Until then Ill keep it in a pot for a year or two. Also lets say it all works out will this durian fruit by itself good or even if i get another of the same variety, or will i have to get a different variety to insure fruit.

Michael- I have my lemon drop that i grew from seed in partial sun (mostly it gets a little of the morning and setting sun but filtered the rest of the day) and it is doing very well.

Thanks - I have the Lemondrop and my Mangosteen both sitting under my grape arbor and they seem to like it in the
partial shade. I might have over fertilized the Lemondrop though as the new leaves are somewhat shriveled (I'm guessing as it has plenty of water).
