Could the lack of tartness be that it was more ripe?

Is it typical for a budsport to taste different?

Not sure if I should keep pruning the rootstock suckers or let them grow with an eye for the future.

You should probably cut all the rootstock suckers.  The bud sport(s) that they are referring to do not emanate directly from the rootstock.
