I've tried the sour citrus, and sour cream, all really good What is your favorite taste altering experiment?

Well, it does make red wine that has gone bad taste really sweet! My daughter-in-law discovered that one!

Makes a strong IPA beer taste sweet with some special notes for me.

I found when i chew an entire berry the change is too sweet. When I gnaw that skin.
In fact the berries themself become sickenly sweet if I chew them too long. My Bush makes larger berries than anywhere else I've gotten though, and they are coming right off the plant. I recommend using half a berry and dispatching it quickly.
I love my oranges on them. Im planting goji and noni directly due to my miracle berry for this reason. And looking for Soh Shang (goumi, silverberry)
Infact.. I'm looking for any sub acid, generally discarded undesired fruit. I figure miracle berry could make a fruit garden to die for

My neighbor has a sour variety Star fruit you absolutely cannot eat at any level. After eating the miracle fruit it tastes better than ordinary Carambola.

Awesome... I've been wanting to grow noni... I killed the first one due to frost I think.

Well, the problem with using miracle berries that way is that it DOESN'T turn things sweet. It only masks sour and bitter, which allows inherent sweetness to come through. When I tried to use it to "sweeten" my coffee, all I got was weak, slightly coffee-flavored water. So if something tastes icky but has no inherent sweetness, it may just turn it "blah". I have a feeling that may be the case with noni. I have a few that are almost ripe, so I will have to try it!
That being said, keep us posted on anything that it DOES improve!

This is how it works:
In 1968, scientists isolated the active protein responsible for making things taste sweet. Because of its miraculous way of making things taste so good, the protein was dubbed miraculin. When miracle fruit is consumed, the miraculin in the berry binds to the taste buds on the tongue. A person has receptors on their taste buds that identify sweet, sour, bitter and savory tastes. Normally, if you were to eat a lemon, your sour receptors would start firing. You can learn more about what happens in How Taste Works. Under the influence of miraculin, however, the sweet receptors start signaling and suppress the sour tastes. The miraculin rewires the sweet receptors to temporarily identify acids as sugars.
If someone didn't get the effect they may have swallowed too fast or not separated the pulp from the seed and swished the pulp around in the mouth enough to coat the taste buds on the tongue.
When the berry is consumed, it may not taste like much; it's been compared to a less flavorful cranberry [source: Farrell, Bracken]. Much of the berry is a bitter seed, but the little pulp that's there packs a big punch. To get the full effect, the berry's pulp should be held in the mouth for a minute and spread all over the tongue.

Miraculin is all about the pH. I thought the same thing when i tried some savory things and just tasted bland. But to put it in perspective google says that coffee has a pH around 5-6. Beer would be more acidic than that. Orange Juice is around 3, Lemon Juice can even be 2. I thought coffee was way more acidic than that. Ive also been told it was, but i guess its not as acidic as i thought.
That might explain your results Carolyn. I sure hope Noni works. My little plant (whihc has doubled as my desk plant actually!) is only about a foot tall but its steady growing. im hoping to get her a big pot and sun.. get me some fruit next autumn.
Still cant find any Acerola though :( or any quick fruiting acidic shrubs.

For taste experience try biting a phyllanthus emblica (Indian gooseberry or Amla) and next have a sip of water!

I did not realize that miracle fruit blocks HEAT!!!
Just got done swilling down a huge bowl of very spicy kimchee soup at my favorite Korean place, and it was so sweet and tasty, with NO hint of heat. Meanwhile, my hubby, who also loves hot things, was sweating up a storm, and my mom was chugging water and breathing through her mouth to cool down.
Chili pepper eating contest, here I come!!!
