I am NOT in Florida, but in my experience, wait until the skin starts turning black and you are ok to harvest.

I have a mature mexicola avocado tree and I don’t pick until fully purple. I’ve noticed irregular ripening if picked green. I wait until the avocado comes away by lifting it up and having the panicle snap the fruit loose.

The me I and type avocados will turn black and fall off.  It will become obvious when to pick then.  I don't think rain will impact your fruit flavor.  Most avocado orchards run the soil moisture near field capacity anyway, they like water.
