Bearss lime, number one most important as it makes so many cocktails better!

It looks like the area around Perth is the equivalent to US growing zones 9b or 10a, I would therefore assume that varieties like Satsumas that require some cool weather to fully sweeten and do best in 9a or even 8b in the US are probably not a good choice.  I also assume that there is relatively low risk of freezing weather there, so you would not be limited to early season fruiting varieties.

Given the above to be accurate, I would likely pick varieties that allowed for prolonged harvest season, for lemon I would probably pick Meyers due to their ability to continuously produce fruit throughout the year, as well as their ability to hold it on the tree for prolonged periods.  For eating oranges, hands down my favorite is Cara Cara, so it must be on the list, for juicing I would probably go with Valencia, on limes I am partial to Key Lime, but this really depends on how you are using them,...

Bearss is definitely the best lime.  I'm getting rid of all my other limes and keeping the Bearss.

I pretty much agree with Millet's list, except I would throw in an Owari satsuma, just because it's the standard. And The only pummelo I have had is Hirado Butan, and I like it very much.

The mandarin that I'd keep if I could only keep one would be Kishu. A close second would be Gold Nugget.

As Greg A wrote above the Kishu is indeed a good tasting fruit.  I used to have a Kishu tree, but I replaced it.  MY one disregard for the fruit is that it is so small.

I don't have any other Mandarin to compare to, but I am very happy with my Kishu; it makes up by it's prolific fruiting to compensate for it's small size. (Not to mention it's excellent flavor and super easy peel).

As for pummelo, am also happy with this Vietnam origin I think, with labeled as "Buoi". The largest fruit from my young 1st time fruiting tree is almost 4 lbs.

Harvested this season (2nd year fruiting) maybe 5 or 6 of this basket, so far...

The largest Pummelo:

Lime: Kafir, as we use the leaves a lot for Asian cooking. Also: Bearss
Orange: Washington Naval

I think the OP is planning on 16 trees, 4 from each category.

Mandarins sweeten just in California zone 9b.
