Juicing Jaboticaba

this season I'm seriously considering juicing some jaboticabas. (mainly because the trees make so much fruit, it's almost impossible to eat it all.)

I just haven't figured out the best way...I think I'm going to hand press them through a metal colander...while trying not to agitate the skins or crush the seeds, hopefully reducing the amount of tannins in the final product.

anyone ever juiced jabos before?

I suppose I could freeze the juice after is bottled, so I don't have to pasteurize it?

any info on this subject is appreciated!

I have heard of people using them to make wine. This would require them to be juiced.
Good luck & perhaps you may decide to ferment some?

Press is nice because you get every drop out, don't have to remove skins, or remove seeds, which i a lot of work when you do large quantity. Here is the finished product. Forgot to say, if you have too many to handle you can also freeze them whole and process them as time permits. They're also good dried if you have a dehydrator?

Have you try their jaboticaba wine from this Hawaiian winery?  Thinking of order a case; my jaboticaba has a few year to go before I can bottle my own.  :)

Have you try their jaboticaba wine from this Hawaiian winery?  Thinking of order a case; my jaboticaba has a few year to go before I can bottle my own.  :)

I've never heard of that winery before. The problem is that it's blended with grapes. A local winery here called Volcano Winery also makes a jaboticaba/grape blend, and it's not very good. I think it's mostly grapes. Jaboticaba wine is excellent when pure 100% jaboticabas.

No, i used 100% alcohol. If you can get that it's better than using vodka as vodka has a taste it will impart. In a pinch you can use vodka though.

Liqueur is a bit easier than making wine, but yeah if i ever find some time and loads of jaboticabas i might attempt making wine. I'm not much of a wine lover, but for jaboticaba wine i make a total exception. ;) I've tasted home made jaboticaba wine and it's still a fond memory of how great it was.

it took about 25 minutes to make a half gallon...pressed them by hand through a colander...the end result was nectar of the gods!!  SUPER SWEET!

2.5 gallon bag, pretty much filled to the brim

Tomas...I'm guessing I had about 7-9lbs of fruit...and got about 1/2 gallon of juice...maybe a little more.

I didn't press the fruits too hard, so I would avoid the tannins in the skins....it worked great....it was like extra virgin olive oil...the first press was the best.   The juice had a light white /violet /pink color.  If you really pressed harder and scraped, the juice got darker, and more tannic...but I bet I could have got about 25% more juice if I really pressed them....but I'm happy just getting the cream of the crop....lol  (I'm a real jabo snob)

I have just took the last 2 pounds of my march 2012 jabos  out of the freezer.
I followed a recipe out of the RFC tropical fruit cook book to make juice and then
make jam. crush fruit cover with water,boil add sugar lime juice for acid and add pectin
  End result it did't jell that good but it sure is good over ice cream
I will try again with some of my march 2013 stash

Jaboticaba jelly is very popular here and you can often buy it at farmer's markets.

my wife sometimes makes juice, but i prefer them frozen.

Try good non bitter cucumber juice to lower the sweetness, it should make a really good mix. I wonder how it would do with coconut water as well.
Grow mainly fruits, vegetables, and herbs.

CM, do you blend them frozen or just let them thaw and eat out of hand?
