They can be picked on the green side, just turning yellow, as long as the mango is plumped out , and comes off easily from its stalk.It will ripen and yellow on the counter.I picked a bunch that were large sized, almost falling off the tree , this year and they ripened perfectly.a
Fall off easy? They more you screw with the fruit, you will cause it to release from the stem regardless if it is ready (that stem already looks messed up where it connects to the fruit possibly from messing with the fruit to see if it will "fall off easy"). Leave it alone and let it get some yellow color and watch for the shoulders to fill out.
Usually the only reason to pick early is to beat them damn squirrels which can be the biggest problem.

Picking a mango mature green usually results in best flavor and texture. Took me about a decade worth of growing to finally realize this.
