I wait until it turns mostly yellow. Once it’s completly Yellow, it can fall from the tree very easily. I’ve picked some with just partial yellow and they ripened fine. You can gently cradle the fruit in your hand and if it breaks off, it’s probably ripe.

I usually wait until the powdery mildew clears. Unfortunately by then all of the fruit have disappeared.

I had grafted a few cuttings from Simon 3 years ago -- thanks for Simon -- and this year the branch gave big flower stalks but then heavily infected with powdery mildew. I put in a big battle using Neem oil. Luckily I ended up with about 5 healthy looking fruits 1 to 2" long now. This year is not a good year in LA or OC in my experience: all mango trees had heavy mildew and very few fruits compare to last year. Longan also is in off year too.

They can be picked on the green side, just turning yellow, as long as the mango is plumped out ,  and comes off easily from its stalk.
It will ripen and yellow on the counter.
I picked a bunch that were large sized, almost falling off the tree , this year and they ripened perfectly.a

Thank you so much for the response I’ve been eyeing them out they are huge but they still aren’t coming off the stem easy so I have left them.

Checked today and they still don’t fall off easy.

Fall off easy?  They more you screw with the fruit, you will cause it to release from the stem regardless if it is ready (that stem already looks messed up where it connects to the fruit possibly from messing with the fruit to see if it will "fall off easy").  Leave it alone and let it get some yellow color and watch for the shoulders to fill out.

Hence the reason for this post. I am not familiar with lemon zest and when to pick. So from your comment I’m assuming lemon zest turns yellow when it’s ready to pick. So I’ll wait for that. From what I have seen some varieties need to be picked green and ripened inside to have better flavor, so that’s what I’m trying to know if I have to do with lz

There are very few mangoes that "should" be picked mature green for backyard growing/consumption.

Usually the only reason to pick early is to beat them damn squirrels which can be the biggest problem.

Or for commercial/shipping purposes.

You can pick green of the mango's shoulders have filled out . As far as coming off easily, the mango  stem should be thin and brown, so that the mango comes off easily.   They will ripen just fine.
The squirells do love this mango, and for good reason.

I would wait until they are at least partially yellow. If you pick lemon zest too early they taste chalky.

The other reasons to pick early include:

 - Mitigate jelly seed and soft nose
 - Mitigate washout due to downpour that happens just before ripening

Counter-intuitively, a tree ripened mango is not necessarily better than one ripened indoors. Picking a mango mature green usually results in best flavor and texture. Took me about a decade worth of growing to finally realize this.

The same thing applies to Jackfruit aswell.

I have been whispering sweet nothings at my first, one and only Lemon Zest for the last few months, I opened up the protective clam shell and it had a split from stem to stern. #%$&^*

The lemon zest was delicious. I didn’t perceive a washed out flavor, which I was expecting from a lot of the comments. I picked it when it showed yellow striping and ate it 2 days after. Very sweet and creamy and I really enjoyed  cleaning the seed and the flavor you get close to the peel. Definitely glad I planted the tree. Let’s hope the other 18 or so fruit are as good.   ;D
