concerning tender core of banana pseudo stem

We have been harvesting bananas at a mature green stage and making flour. It turned into cutting up the core of the pseudo stem.

Now I've seen video of people cutting down banana at a peak, both bell fruit in young growth , just showing and very green with leaves too.
They dropped the stem inches above the soil. About 36 inches is kept from the base. Stripped of the leaves it is further processed.

My interest! Traditional process, vs effective process vs health/economy.

Plants respond to thinning. Is this a good cycle, oppose to sucking everything from your soil for some fruit? I'm trying to be "real" lol.

Much to say! Lol. Who makes products from the banana that aren't the modern yellow sweet banana, or typical fried plantain. I'm interested in doing curries and we also make flour, I'm curious what is known or if I am for now the pioneer.
