Abius and latex

I sampled an abiu a few weeks back.  The taste was good, but b the end, my mouth was stuck together from latex.  Is there a way to avoid this unpleasant situation--let it ripen more?  Eat it a certain way?

If picked too early from the tree, they will have more latex. Properly ripened fruits will have minimal latex.

Lol I was eating them like a caveman, and later I noticed my lips were burning from the latex!  Lasted for a while...but no serious reaction thankfully

Improved selections that are ripe have little latex and this is one of the key differences between the good and the poor.There is less latex usually than star apples except in less ripe,thick skinned varieties that are not the best.I saw a few poor variety abius in the markets today that I sneered at and knew they were only for the latex fetishists.

I admit I ate it while driving so probably not the best way to go about it--especially pouterias.  So, the real answer is,

 good cultivars + proper ripening= lips that don't stick together?

I agree with Mike that there are bad ones that have much more latex even when fully ripe. Stick to grafted trees or seedlings of Z2, Z4 and the other top notch fruits. Also, the better cultivars have one of two seeds. Bad cultivars can have 4 seeds!!!!

I eat a lot of abiu here and I suspect that the vast majority of those at market are from seed grown plants.  I half the fruits and eat with a spoon and have never really had a problem with objectionable latex -- sure you can feel it on your lips if you smack your lips but by no means bad.  I assume you tried one that was all yellow or nearly so?  If it is from a decent cultivar, they are quite enjoyable just ripe (when that are custard-like) or fully ripe (and more jelly-like).  If it is a good one, you can even scrape the skin pretty aggressively to get every last bit of flesh and still not have the latex too objectionable.

now that we are talking about Abius, here are some Florida grown fruit. These are from a seedling tree and are very sweet with 2 seeds per fruit.
