Fruits you can eat unripe

Hi. I know you can cook with unripe banana, papaya, mango, and jackfruit. What other fruits can be eaten (safely) unripe?

Ok I will play. Breadfruit,chempadak,bilimbi,guava,pepper,capsicum, chilies,santol,limes,safu and avocado. Im sure there are a million more.

Avocado, really? How would you prepare it?

Has anyone ever eaten an unripe mamey sapote? Seems like it would cook up like a sweet potato

Why would anyone want to eat a non-ripe mango or banana? Part of the reason is scarcity in more "primitive" settings. When there is not much around to eat those green bananas look mighty good, will get thrown into the stew pot. Green papaya will be grated into a salad.

I cook with a percentage of my bananas since they ripen over a short period of time. I freeze a good amount too, but I like the variety.

In terms of mangoes, cooking them can be useful for fruit that drops too early, in my mind. I haven't tried a cooked unripe mango yet though, so don't know if it is worthwhile.

#1 Un ripe grapes ghooreh

I never had them from the store,
but before I even knew about them I tried them when the city cut my neighbors concord or niagra vines down.

After dried the have a green apple flavor more
(makes since since it would have more sharp malic acid in green (Granny smith) apples)
 and not tartaric acid like ripe ones)

these were not far along after forming
so I would think if you wanted to thin wine grapes to have a better quality wine
you could let some develop for a few weeks before thinning to use for a snack.

#2 I hear  when unripe the flavorless Indian straw berry has flavor it loses it's flavor (acids) when ripe)
(Genus Duchesnea indica Not strawberry genera)

#3 unripe (red) mulberry just barely unripe, and freeze dried for more acid profile.

I know when On a far bike ride I wanted bitter tea
 so chewed up some mature mango seed
 put it into a mess kit boiled water , and made some tea,
but never tried Gulti , or store bought powdered mango seed to compare,.
(or even knew it existed at the time)


I think another question to ask is what fruits can be unripe,
 and what fruits will ripen after being picked unripe?

I stored a green tomato (beef steak) for 2 or 3 months on a window sill, and it turned red

Also some persimmons that were hard as a rock
stored in fridge in ziplock bag for around 3 months, and they ripened sweet
(others did fall from the tree ripe when I picked these though so decided to experiment ,
but these were in arms reach, and didn't have a rope with me to shake any down)

Would tamarind be Okay picked early

If you have unripe mangos I hope they are not stored in a plastic bag

Store bought things picked early like apples never taste as good,
but I think it is better taking them out of the plastic bag it builds up ethylene
at least with grapes I've had them raisin up in fridge out of a plastic bag but spoil in the plastic
actually had pawpaws (for the seeds) raisin in the fridge that were ripe but in a box with newspaper.

Both, they are consumed both pre-roast when they are basically white fresh almonds and also when they are more green and have a jelly-like texture (in this stage many consume the whole thing, soft shell and all.

I prefer unripe plums to unripe almonds

that'd be cool if that tree drops them naturally early I'd graft a scion, and use it for the liquor.

All this has me thinking although hawthorn fruit leather is very good
I should try some hawthorns ((better known mexican hawthorn tejocote)
  before they get sweet and ripe ,
 and maybe have some acids left or dry them for tea unripe or just snacking out of hand
 (same with another (soft mealy boring "plain") apple family member mountain ash (rowen )

I've had the great misfortune of eating unripe avocado.  Very bitter and astringent.

When the kernel is just watery and right before the hull or the shell start hardening, we eat the whole thing!



Later in the season, the kernel develops inside and as soon as it gets full, we eat the kernel after peeling it.

I prefer unripe plums to unripe almonds

Most almond varieties are terrible at the first stage, so we have very few well known varieties that are known for unripe eating qualities and they're amazingly delicious. Of course, you cannot eliminate the sourness but they can still be very pleasantly sweet, certainly way better than unripe plums.

Jocote or hog plum. My wife loves them green and looks for the ones they can tronador or traqueador. Those make a cracking noise when you bite into them.

+1 for the unripe walnut liquor, by far my favourite alcohol drink.
I have eaten unripe walnuts also, very crunchy and different fresh taste, compared to the ripe /dried out ones which are too oily for me .

When you eat unripe fruits  most of them have higher content of VitaminC than the ripe ones.  Also in cooking an unripe fruit you are denaturing many of the elements and changing the taste and many times the texture of the fruit

Very true and cooked green papaya, breadfruit, bananas and jackfruit say are more about having a vegetable than dessert fruit.

I think the main reason is because we can’t grow the more delicious veggies here in the summer so these become other options. Some people grow food for reasons other than just taste, like being self sufficient, saving money, having the most nutritious produce available, Etc. I think green papaya salad is very good and is not a substandard food. Plantains are amazing. I wanted to try more summer crops but I haven’t had enough time. My Everglades tomato just set fruit so we will see how they taste.
