When is the proper stage to pick Canistel off the tree?

I have some pics. I'll begin with the one that is all or mostly yellow. The other ones are beginning to yellow-up.

Thanks and you're welcome. :) I just want to make sure that I don't end up picking one too early. I know it's supposed to be completely yellow, but not sure if it's suppose to soften up a bit or not.

They just need to color up, not soften up. Pick them hard and will soften indoors. My alarm is set off when one splashes on the ground, then i go about picking the others off the tree.

That rawks! Pick by color. When the green is converted to a nice shade of orange-yellow, then you can pick and ripen indoors. If you leave too long, it will fall to the ground. The one on the top there looks like it's not more than a week away from ripening. They tend to fall pre-maturely when we get cold blasts, so you could get a couple that drop next week. Those F#2 are delicious. I'm considering topworking my giant trompo.

Thanks Jeff. :) I'll keep a even closer eye on the one that's in the top pic. I think your trompo would be able to take hundreds of Fairchild #2 scions. lol

Pick the canistel when most of the green coloration is gone but the fruit is still hard. Do not pull the fruit from the branch. Instead, cut the branch at the point where it meets the fruit.

A family member is bring over lots of Fairchilds #2 from his tree's overproduction of fruit.

It makes a very nice tasting sweet puree. The recipe consists of Fairchild #2 canistel, honey, organic raisins and cinnamon; very tasty.
Next I'll be making a smoothy.

I can't wait to compare my 'Oro' canistel, when it bears fruit to the moist Fairchild #2.

A little bit of eggfruit (canistel) in any smoothie really improves it...sweetens it up and makes it a bit more creamy.
