For mulberry you really don't need to wait until it goes dormant. I graft them all year long.
To answer your question, yes, I should have more scions available later this year. If these fruits taste excellent then I may not sell much so I can graft it on more of my trees. If they are ok/average than it will go to the chopping block for sale.
I do see some green fruits growing on my grafted branches so I hope to taste the fruits for the first time (last year was one small fruit) to do my taste comparison with all of my other mulberries and will let you all know my ratings (Black Pak, White Pak, Australian Green, King Shahtoot, Thai Dwarf, World's Best, Silk Hope, Shangri La, Tice, Contorted, Illinois everbearing).
