That’s the question. When do I know to pick the fruit from the tree?  I have my first and only fruit ripening on the tree.

If it is like regular custard apple, look for a slight color change and a little give when you squeeze it

I've heard mixed experiences with ripening of the cherilata in SoCal. It appears to like more heat for proper ripening. Similarly, the most spectacular cherimoya flavors are end of season harvest. Protect it from rats and grab the fruit everyday until it falls into your hand

Thanks for the advice guys.  I will just keep testing it and remove from the tree when it falls into my hand.  I don't get a lot of heat, so I will leave it on the tree as long as possible to let it sweeten up.

I've never seen an annona go bad because you didn't pick it in time I've seen animals eat them off the tree to early.

My Painter Cherilata fell off the tree while I was at work.  I tried the fruit today.  I have to say I really liked it!  It has a very low seed count.  It has no grit.  And it has a very nice taste with out an off putting after taste that I sometimes get from Atemoyas and Cherimoyas.  The flesh is chewy and a very pretty red.  For a first fruit on a small potted tree I was very impressed.  I would recommend this to anyone interested in Annona's.
