Tropical Fruit Discussion / question about grafting

A couple weeks ago I grafted a couple Cac mangos
I covered each one with a plastic bag
I took the bags off today and watered them and placed the bags
back over them
How long do you keep the bags on?

I have around 10 mangos that got hit pretty hard by the
two cold nights in January even though I covered them
Several of them started pushing. Initially I didn't water
them but what's the next step? Here's some pictures one
is my honey kiss and the other is a super alphonso.
Should I cut off all the dead branches? Should I cut the upper
dead trunk away. should I water once a week should I fertilize.
I am thankful for the proper advice initially not to water.

I have noticed this hogg plum growing alongside a road the past
couple months. Finally the fruit colored up and I got a couple today.
They are super sweet mostly juice inside. Really tasty!
I will get cuttings of this for sure
