Can an immature Jackfruit tree fruit, thus immature seed(I imagine or does the fruit seed mature before the fruit) give me germination and a eventually a good fruit?

If you are talking about a store bought jack, then most likely you will get good germination rates on their seeds, but since it is a seedling tree, there is no way to tell how good the fruit quality will be until it fruits. Would be better to graft something onto those seedlings.

To the OP's post, its a little confusing what you are asking. 

If the tree fruit and fruit is mature, seeds should germinate.  An immature jackfruit tree can send out male flowers as a very small tree but usually will not send a female flower (which is the fruit) until at least 3 years old.  If in a pot, usually will need to be larger and older to send a female flower.
