I am in zone 9. I prune,remove leaf my cherimoya and atemoya at the same time. At this time my trees still have fruits,so I let the fruit develop more before harvest off season fruits ,then prune and remove leaf. I would keep 10_20% healthy looking 🍃 on tree. You could add the way you prune your trees, different varieties fruits set...taste test...comparison...later on when the time comes.
