Caimito - when to harvest?

Looking for an advice on when to harvest star apple (caimito) fruits. Mine have just started to change color, but no purple yet. First time fruiting!

Well there's green and purple
the "green" one is starting to become light green-yellow ish and they are a bit overripe...the purple one will be looking mostly purple.

But at what point do I harvest purple fruits for the optimum taste?

The more purple the better.
I wouldn't pick it if it's not more then 2/3rds purple

You can let them go full purple, and still let them hang on tree for a while. They will start to soften a bit. Have heard that if they ripen longer, not as much latex and fruit is better.

They don't fall off the tree.
They will rot and dry on the tree if not picked.
