When do You eat your Lemon Zest?

I'm just starting to harvest the few LZ mangoes from the tree's first bloom.

If I remember right, I have enjoyed them at various stages, from kinda firm to kinda soft.

Opinions from G.O.A.T  connoisseurs welcomed.

Eat them when ripe.

Should be picked with a large percentage of yellow coloration and then let them turn their classic yellow-gold color (with at times some green mottking).  Eat them before that are ripe and they tend to not have the sweetness and be a bit on the chalky side.

They taste very good when they are underripe. Not green, but mature.

My favorite way to eat it is to cut it up into pieces and mix that with pepper, culantro, garlic, salt, and a few other things.

I like them fully ripe, one of the most amazingly sweet and complex citrusy flavors I have ever tasted. The first couple fruit from my young grafts were extremely bland but the last couple fruit were amazing. I got a lot of the citrusy flavor off the flesh close to the skin. Some fruit tastes more orangy and some taste more lemony. We use a lot of lemon Zest in my wife's baking and when I make Lemoncello and I've had a couple LZs that have a definite lemon Zest flavor.

This mango is amazing and tastes more like desert! I feel the later season fruit tastes better than the early season fruit.
