Eat it now! As soon as any yellow shows should be ready, with more green should be firmer and maybe tangy. The more yellow, the more mushy and snotty.

Very thanks, but the question is: I dont have problems with snotty or mushy pulps, what I want is that they have the best sweet taste possible... so, it would be better to wait till full yellow in that case?

At last the big day came and I tasted for the first time in my life the Biribá fruit. Its flavor is very sweet with a touch of acidity and reminds of Lemon Pie, even I thought it has touches of melon flavor, condensed milk, whipped egg. Particularly, I do not dislike the creamy and gelatinous pulp texture.
After tasting 3 fruits, I detected peach tones as well and a very high level of sweetness even though the peel was still with some green spots.

Excelente species!

Great news! Wonderful fruit that is tasty out of hand, but probably better in smoothies. I like to clean them of seeds and then freeze until needed.
