Preserving Lychees?
« on: June 01, 2019, 10:43:27 AM »
I should have asked this question days ago. Now I'm sitting here looking at a big bucket of lychees I harvested this morning.
What is the best way to preserve lychees? I'd like to be able to offer some to my snowbird friends and neighbors when they return to the 'hood in November.
Any special trick to freezing them? Skins on or off? Seeds?
I also have a food dehydrator. Can lychees be dried?
    All advice will be appreciated.

De-shell them and vacuum seal bag the place in freezer. They were still good year later

You can put them whole in the freezer.  You don’t need to peel them.

You can dry lychee in the shell. I have uncles that grew lychee. They're retired now.

Vacuum pack whole ones and then freeze it.  Get them dry before vac packing.
