Uses for unripe mangoes?

I know this is an older thread, but we need to be getting our recipe ideas ready for the upcoming mango season :D (including green mangoes). For an American twist, seeded and peeled green mangoes can be substituted for apples or peaches in your favorite cobbler recipee. I have used hard green Nam Doc Mai mangoes in place of apples (pictured) and softened green Valencia Pride mangoes in place of peaches. Both were excellent.

I tend to prefer mangoes that are a little more on the unripe side. Makes a great mango salsa to spread on top of grilled fresh fish.
