Juicing Jaboticaba

this season I'm seriously considering juicing some jaboticabas. (mainly because the trees make so much fruit, it's almost impossible to eat it all.)

I just haven't figured out the best way...I think I'm going to hand press them through a metal colander...while trying not to agitate the skins or crush the seeds, hopefully reducing the amount of tannins in the final product.

anyone ever juiced jabos before?

I suppose I could freeze the juice after is bottled, so I don't have to pasteurize it?

any info on this subject is appreciated!

I have heard of people using them to make wine. This would require them to be juiced.
Good luck & perhaps you may decide to ferment some?

Forgot to say, if you have too many to handle you can also freeze them whole and process them as time permits. They're also good dried if you have a dehydrator?

Have you try their jaboticaba wine from this Hawaiian winery?  Thinking of order a case; my jaboticaba has a few year to go before I can bottle my own.  :)

I've never heard of that winery before. The problem is that it's blended with grapes. A local winery here called Volcano Winery also makes a jaboticaba/grape blend, and it's not very good. I think it's mostly grapes. Jaboticaba wine is excellent when pure 100% jaboticabas.

No, i used 100% alcohol. If you can get that it's better than using vodka as vodka has a taste it will impart. In a pinch you can use vodka though.

Liqueur is a bit easier than making wine, but yeah if i ever find some time and loads of jaboticabas i might attempt making wine. I'm not much of a wine lover, but for jaboticaba wine i make a total exception. ;) I've tasted home made jaboticaba wine and it's still a fond memory of how great it was.

it took about 25 minutes to make a half gallon...pressed them by hand through a colander...the end result was nectar of the gods!!  SUPER SWEET!

2.5 gallon bag, pretty much filled to the brim

Tomas...I'm guessing I had about 7-9lbs of fruit...and got about 1/2 gallon of juice...maybe a little more.

I didn't press the fruits too hard, so I would avoid the tannins in the skins....it worked great....it was like extra virgin olive oil...the first press was the best.   The juice had a light white /violet /pink color.  If you really pressed harder and scraped, the juice got darker, and more tannic...but I bet I could have got about 25% more juice if I really pressed them....but I'm happy just getting the cream of the crop....lol  (I'm a real jabo snob)

I have just took the last 2 pounds of my march 2012 jabos  out of the freezer.
I followed a recipe out of the RFC tropical fruit cook book to make juice and then
make jam. crush fruit cover with water,boil add sugar lime juice for acid and add pectin
  End result it did't jell that good but it sure is good over ice cream
I will try again with some of my march 2013 stash

Jaboticaba jelly is very popular here and you can often buy it at farmer's markets.

oscars recommendation to freeze is the best. frozen jaboticaba is as good or better than fresh. when frozen, one can eat the seeds and skin (for some reason one doesnt sense the acidity of the skin when frozen).

my wife sometimes makes juice, but i prefer them frozen.

Try good non bitter cucumber juice to lower the sweetness, it should make a really good mix. I wonder how it would do with coconut water as well.
Grow mainly fruits, vegetables, and herbs.

CM, do you blend them frozen or just let them thaw and eat out of hand?

Thanks for the idea!   I had so many jaboticaba this past month that I gave up picking them and let the bushy-tail rats and birds have the rest. I was eating a pound or two a day.  I guess juicing them would be more efficient in consuming them.

honestly, I've always thought Sabara was sweeter...but both are sweet if they're extra ripe.

only 3 people have tasted the juice so far..and all 3 agree it must be watered down...I will try to share this juice with more people, to get more feedback.

still need to borrow a refractometer...if someone has it locally, I can share some juice or fruits with you!  and even a seedling Red Jabo.

I don't have my jaboticaba yet, it's coming next week, so I haven't tried the fruit yet. But if I get too many, my plan is to freeze them like I do organic grapes. It's like getting to suck on a piece of sorbet or an ice pop without the mess, you can eat as many as you want all day, and it keeps you cool so you can raise the thermostat and save money on air conditioning. And they last for months in there. It's actually a really good money-saver in hot climates, or in colder ones in the summer, because I keep the air off most of the day and only need it for nighttime when I sleep (since I stop sucking on frozen fruit then). If jaboticaba are that sweet, then they will be awesome frozen, because freezing seems to dry things out a little and concentrate the sugars so they taste sweeter than when you first put them in.

Maybe I'm missing something, but if you really have more than you know what to do with and perhaps you don't always want to juice, couldn't you just slice them in half (I don't have them yet, but I'm thinking like grapes, slicing carefully around leaving the middle uncut and pulling apart) to remove the seeds, and then toss the halves in the freezer? If you're good with a knife you could do a whole pile in a minute or two.

Nothing against the juicing, I only mention this if you mean you'd like to freeze but think saving the seeds prohibits that - at least it buys you time so you don't have to do all the juicing at once. It sounded like maybe you were saying you juice not necessarily because you always want to do that, but because you have no other options. I might have misread it though.

Maybe I'm missing something, but if you really have more than you know what to do with and perhaps you don't always want to juice, couldn't you just slice them in half (I don't have them yet, but I'm thinking like grapes, slicing carefully around leaving the middle uncut and pulling apart) to remove the seeds, and then toss the halves in the freezer? If you're good with a knife you could do a whole pile in a minute or two.

Nothing against the juicing, I only mention this if you mean you'd like to freeze but think saving the seeds prohibits that - at least it buys you time so you don't have to do all the juicing at once. It sounded like maybe you were saying you juice not necessarily because you always want to do that, but because you have no other options. I might have misread it though.

yes..i've done this too...and its a great way to preserve the seeds, while enjoying the fruit frozen.....but it's just too time consuming to do this with thousands of fruits....juicing is much easier...and very rewarding!

So does your juicer extract the seeds whole and make them easy to pick out? I don't have a juicer, so I don't know much how they work. I just assumed it would mangle everything in its path.

haha...no juicer...i just mashed them by hand (with a potato masher) through a metal colander, into a pan....then, funneled the juice into a bottle.

very primitive.

then, I dumped the skins and seeds into a bucket..and took a hose, and flooded the bucket....the skins all float to the top.  (it reminds me of panning for gold!)

LOL, nice system! I bet you could bake with the remnants of the fruit if you don't want to waste it... baking with fruit is often better when it's a little dry anyway, so everything cooks evenly. Jaboticaba muffins? Or if the remains are not too messy, you could put them in stirfry or something... I like to use the skins and fiber of fruit too, because they often have the most nutrients and the most flavor and color too, so even if I end up juicing mine like you (if I'm so lucky to have so many!), I'll probably be wracking my brains for recipes that use it all up, lol...

funny you should mention using the remnants for cooking!

I just juiced the last of my jaboticaba fruits...and this time I strained the juice, and whatever was left in the strainer, I threw it in they dehydrator...so hopefully I'll have some jaboticaba jerky tomorrow...(not sure how long it will take...but I will post some pics if it turns out ok)

this time the juice was very nice...I think I like it better without the pulp!

here is all the pulp that I strained from the juice...and placed into a dehydrator

here is the strainer after I dumped out the pulp...the fiber really clogged the strainer, making it take about 5 minutes to strain all of the juice!

here's what I could manage to pour into the bottle...without spilling like a dumbass while I was pouring into the bottle...I probably lost a few cups.  :'(

this time the juice was even more refined!  its looks as good as it tastes..the color is nice!  some how reminds me of mangosteen juice I've tasted.
