Recipes / Baja Crab Stuffed Avocado

Baja Crab Stuffed Avocado




Ingredients

2 avocados, halved and pitted, (not ripe, but not hard)
1½ tbsp Rodelle Baja Seasoning6 ounces crab meat
3 green onions, chopped
1 tbsp lemon juice
¼ cup cucumber, chopped
2 tbsp cilantro, chopped
1 tbsp EVOO (Extra Virgin Olive Oil)
½ tsp salt

Directions

Scoop the avocado meat out of the skin, but leave at least ¼ inch intact. Dice the avocado meat into small pieces.
In a medium size bowl, combine the avocado meat with Rodelle Baja Seasoning and the rest of the ingredients. Toss well.
Stuff the avocado skins with the mixture.
Serve over baby lettuce.

Recipes / Rambutan Salad

Tropical Rambutan Salad



8 rambutans, skinned and carefully pitted
½ tablespoon crushed peanuts
1 small red chili seeded and minced
8 very small pieces of lime, optional to keep the skins on
½ tablespoon of minced fresh ginger
1 tablespoon soft brown sugar
a little water


Method
1. Heat sugar with a little water in a saucepan over medium heat - stir consistently.
2. Once sugar has melted, the water reduced, and the mixture becomes sticky - remove from heat. Scrap the melted sugar into a bowl to set and then crush slightly to achieved a hard and crumbly texture.
3. Once the rambutans have been deskinned and pitted - take a little of each ingredient and assemble inside one part of the halved rambutan - spread some melted brown sugar on the mixture and cover with the other half of the rambutan fruit. Serve chilled.
4. The sensation you would get at a bite of this dish would be an explosion of crunchy, sweet, sour and spicy senses.

Canistel Flan
Ingredients
Flesh of 3 canistels (~1 cup)
4 eggs + 1 egg yolk
1 12-oz. can evaporated milk
1 14-oz. can sweetened condensed milk
2 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. nutmeg (freshly grated
3/4 cup sugar


Instructions

Preheat your oven to 350F. Defrost the canistel flesh if it’s been frozen. Add the four eggs and one yolk to the canistel in a large bowl and mix. Add the evaporated milk, sweetened condensed milk, vanilla, cinnamon and nutmeg and mix until well-incorporated. Used an immersion blender to break up the lumpy bits of canistel. The condensed milk is already plenty sweet, plus we’re making a caramel, so it won’t need any more sugar. Note that the color is almost entirely from the canistels, not the eggs. Then, pour it through a strainer.


Next, the caramel. Put the 3/4 cup sugar into a saucepan over medium heat. Just leave it be until the sugar starts to melt, then stir occasionally with a fork to incorporate the rest of the un melted sugar. After about ten minutes, you should have liquid (molten! be careful) golden-brown caramel.

Set up eight 4-oz. ramekins in a baking dish large enough to hold them, with sides at least as tall as the ramekins. Working quickly, spoon a couple spoonfuls of the caramel into each of the ramekins. It will solidify quickly. Then pour the flan mixture into each of the ramekins. When they’re all filled, place the baking dish in the oven and pour about 4 cups hot water into the baking dish (enough to come about halfway up the sides of the ramekins). Bake for about 40-45 minutes, until fully set (you can stick a skewer into one to get a sense of whether they’re cooked through). Remove and let cool on a rack.


To serve, run a knife around the edge next to the ramekin, to loosen the flan. Then put a plate over the top of the ramekin, and flip the plate and ramekin over. The flan should release onto the plate, topped with the caramel.

Sapodilla Pie 11 cup sugar
  • ½ tsp salt
  • 1 tsp ground cloves
  • 3 eggs
  • 1½ cup mashed ripe sapodilla
  • 1 cup milk
  • 1 cup yogurt
  • 3 Tbsp honey
  • 1 tsp vanilla
  • 1 unbaked 9" deep-dish pie shell
  • Preheat oven to 425°F. Mix sugar, salt and cloves in small dish. Beat eggs in large bowl. Stir in sapodilla and sugar/clove mixture. Gradually stir in milk, yogurt, honey and vanilla. Pour into pie shell. Bake 15 minutes; turn temperature down to 350°F and bake 20 to 30 minutes more or until firm. Serve with whipped cream.

Recipes / Sweet and Spicy Carambola Chips

Ingredients
3 starfruit (carambola)
1 cup liquid honey
1 cup water
sea salt and cayenne pepper to taste

Preparation

1. Preheat oven to 200F.

2. Slice Starfruit into 1/8" pieces (you should have about 36 star-shaped pieces).

3. Bring honey and water to a boil in a small saucepan, stirring until honey is incorporated. Remove from heat and cool to room temperature. 

4. Place starfruit in a bowl and pour syrup over starfruit and toss gently to coat. Strain through a fine mesh strainer; cover and refrigerate syrup for future use. Arrange chips on a parchment-lined baking sheet and sprinkle with sea salt and cayenne pepper to taste. Place tray in oven and dry for 2-3 hours, turning once, until crisp. Begin checking for doneness after 2 hours, removing smaller dried chips once they are crisp. Transfer dried chips to a baking rack to cool.

5. Store in a sealable container in a cool dark place for up to 5 days.

While preparing my dream list of equipment and hearing from all of you as to what should be added to the list and what you all loved to use, it dawned on me that we have a pretty decent sized group here who all purchase this equipment. Then i thought, if I owned a company and had 1,000+ people in my target demographic that I could reach simply by offering a discount (even if it is only 5%), I would do it in a heartbeat.  Consequently, I reached out to a few companies that make some of the items we love, asking to see if they would offer a discount to forum members.  I sent the emails out only an hour ago and have already heard back from Barnel who is willing to offer forum members "wholesale pricing which is significantly below ON LINE pricing" through one of their online distributors (http://www.pnetools.com) .  I am trying to work out the details as to how we would have the discount applied (online code, phone order mentioning the forum, etc) and will let you guys know as soon as I have the details hammered out.

We all know that a grocery store mango is almost unpalatable when compared to a home grown variety but that got me thinking, do all home grown fruit have such a great disparity with their grocery store counterparts?

What is your best shovel?  Cookie Monster had a real beauty that made short work of a longan tree I was ready to toss.  I would love to know what brand and where to get it

Any other vital equipment that I am overlooking?  I can't be too greedy but the wife wants to reward me for another year of toil so time to cash in!
