Thanks Henry! There are few more fruit on the tree, may as well pick them! Actually, some pictures online show them as a deep violet, is this the best stage? If so, for the two I've already picked, am I able to window-ripen them?

The internet lied! i read it's not good for anything but rootstock!!!!!!

Henry's pumpkin pie description caught me off gaurd, I put down persimmons in general for the high astringency. I was under the belief that they were for drying purposes only, definintely not fresh eating.
